This is a simple recipe to follow but I did have a few tweaks that I needed to make due to the results I was having. When blending the bananas and milk together, I was unable to achieve the texture without adding another full cup of almondmilk. Now this could be because my blender isn't powerful enough,my bananas were giving a thicker texture, or a variety of other reasons. I would just say that be sure to have some extra milk on hand, in case you do need to add more. I also feel the peppermint extract should be lowered to 1/8 of a teaspoon as the flavor was a bit too overpowering. I topped mine with whipped cream and chocolate chips.

Overall, I enjoyed the flavor but did not find that it tasted like a peppermint mocha from Starbucks. It still gives that flavor profile but I feel it needs either more coffee or chocolate to really make it pop. I can definitely see the potential in this recipe and think it could be used as a base option to make other flavors. I am excited to try other combinations and see if I can make one of my favorites more calorie friendly.
