Dinner Ideas {6/20/18}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I prepare dinner every week day and occasionally on weekends. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks as voted on by all of you. Enjoy this week's menu!

Vegan Jambalaya with Fresh Multigrain Bread
I have been trying to incorporate more vegetarian and vegan meals which means trying out new recipes often. This meal was a vegan jambalaya that I served along with fresh multigrain bread. My entire family loved this recipe and I found it to be extremely flavorful.

Spaghetti with Turkey Meatballs and Garlic Toast
This is a staple meal in our family's dinner plans. This is my spaghetti with turkey meatballs and garlic toast.

Vegan Gumbo with Brown Rice
This was another meatless meal and unfortunately it did not go over as well as the first recipe. While it had a decent flavor, the texture was off and just didn't meet my expectations. I do feel I could work around the recipe and make it more suited to my preferences.

Sweet Potato Chili with a Cornbread Muffin
This is a redo of one of my tried and true recipes. While it usually includes meat, I exchanged the meat with beans instead. It turned out absolutely delicious, click here for my original recipe.

Cod Fish Fillets, Baked Potato, Green Beans
This was a meal requested by my kids since they love fish fillets. These are made with cod and multigrain breading. I paired them with baked potatoes and green beans.
