Dinner Ideas {4/18/18}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I prepare dinner every week day and occasionally on weekends. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks as voted on by all of you. Enjoy this week's menu!


Monday
Slow Cooked Pork, Mashed Sweet Potatoes, Green Beans
This is one of my husband's favorite dishes and is super simple to make. To make the pulled pork, simply season a pork loin with your favorite herb and spices. Place into a slow cooker on low for about 6 to 8 hours, once it is cooked simply shred and serve. I served ours with mashed sweet potatoes and green beans.


Tuesday
Butternut Squash Soup with Chicken and Breadsticks
This was a new recipe to me, I don't think I've ever had butternut squash soup before but this one was pretty tasty. I added shredded chicken to ours with a topping of butter and garlic croutons. I also served it with breadsticks.


Wednesday
Chili Stuffed Baked Potatoes
One of my favorite comfort food combos lately has been chili stuffed baked potatoes. I like to serve them separately so you add as much chili per bite as you prefer. It is simple yet absolutely delicious! 


Thursday
Chicken Cobb Salad
This is one my favorite salads, a simple chicken cobb salad which I prepared with hard boiled eggs, bacon, and seasoned chicken on a bed of kale with spinach.


Friday

This was a hectic day so I didn't get a picture of the finished meal. I ended up serving roasted pork chops with rice pilaf and homemade spiced applesauce. Super delicious combination!
