Dinner Ideas {11/15/17}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I prepare dinner every week day and occasionally on weekends. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks as voted on by all of you. I will also be including the SmartPoints value for each meal in case any fellow Weight Watchers members are interested. Enjoy this week's menu!


Monday
Italian Slow Roasted Chicken, Potatoes, and Glazed Carrot Slaw
SmartPoints Total: 12 points
This was a new slow cooker recipe that I got from Pinterest, click here to view it. I found that the chicken ended up being a bit dry so I would recommend adding some stock to keep it moist. It was tasty and the potatoes were a big hit!


Tuesday
Spicy Black Bean Burger, Carrot and Potato Fries, Green Beans

I am still incorporating at least two vegetarian meals a week. The first one this week was spicy black bean burgers that I paired with veggie fries and green beans.


Wednesday
Turkey Noodle Casserole

This is a family favorite, especially for my daughter so I try to include it into our meal plan at least once a month. Click here for the full recipe!


Thursday
Honey Roasted Chicken Thighs, Cornbread Stuffing, Corn
SmartPoints Total: 13 points
One of my husband and mine's favorite chicken recipes, this chicken is super flavorful and tender. I paired it with cornbread stuffing and steamed corn.


Friday
Vegetarian Burrito Bowl
SmartPoints Total: 10 points
It may not be the prettiest food picture but it sure was delicious. This was the second vegetarian recipe this week, vegetarian burrito bowls. I made this with cilantro lime jasmine rice, black beans with taco seasoning, corn, and salsa.
