Dinner Ideas {10/18/17}

9:00 AM

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I prepare dinner every week day and occasionally on weekends. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks as voted on by all of you. I will also be including the SmartPoints value for each meal in case any fellow Weight Watchers members are interested. Enjoy this week's menu!

Vegetarian Shepherd's Pie
SmartPoints Value: 6 points
I have been trying to incorporate at least two vegetarian meals a week in our meal plan rotation. The first recipe this week was new to me, this is a vegetarian version of shepherd's pie. It is extremely filling and very delicious. It is even better as leftovers the next day!

Maple-Dijon Chicken, Orzo with Herbs, Green Beans
SmartPoints Total: 12 points
One of our favorite chicken recipes is this slow cooked maple-dijon chicken. I paired it with two of my children's favorites which are orzo with herbs and green beans.

Beef and Broccoli with Brown Rice
SmartPoints Total: 15 points
Another recipe that I love even more as leftovers, this is also a meal that the entire family enjoys and is fairly quick to come together.

Cajun Chicken Alfredo
SmartPoints Total: 15 points
This has become one of my husband's favorite dishes and since my son also loves pasta, it works out quite well for the whole family. It packs a lot of flavor and is simple to make!

Vegetarian Mexican Pizza
SmartPoints Value: 11 points
The second vegetarian recipe for this week was a copycat and healthier version of Taco Bell's Mexican pizza. I feel like this fills you up far more than it may look. My kids absolutely loved it!

I hope you enjoyed getting a glimpse into my kitchen and menu planning for the week. If I have recipes on my blog for any of the meals posted, then the text will be linked in their description. If you would like a recipe for any meals, please let me know in the comments down below.
