Chocolate Covered Strawberry Cupcakes {Valentine's Recipe}

In honor of Valentine's Day, I thought I would share this simple yet delicious cupcake recipe. Obviously it doesn't need to be just served on Valentine's Day but I think it's a perfect dessert idea to celebrate the day. Keep reading for the full recipe!


Ingredients For Cake Mixture:
- 1 cup of milk
- 3/4 cup baking cocoa powder
- 1 3/4 cup flour
- 1 cup water, ideally hot
- 2 cups of sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- Cupcake liners



Ingredients For Vanilla Icing:
- 2 to 4 cups of powdered sugar, depending on how much icing you need
- 1/3 to 1 stick of butter, again depending on your needs (room temperature)
- 2 tsp vanilla extrct
- 3 tablespoons of milk, the more sugar you add then the more milk you will need
- Food dye


Ingredients For Chocolate Covered Strawberries:
- 1 to 2 cups of semi-sweet chocolate chips
- 20 to 30 strawberries
- Sprinkles, sugar crystals, etc. for decorating {optional}


To Make Cake

Step 1:
Began by preheating your oven to 350 degrees Fahrenheit. Line two cupcake baking sheets with your liners. This recipe will make 24 to 30 cupcakes depending on the size of your pan.



Step 2:
Sift all your dry ingredients into a large mixing bowl. Then mix together.



Step 3:
Slowly add in your wet ingredients, and blend for about 2 minutes. This mixture will be quite thin so do not be surprised if it is. 



Step 4:
Pour batter into cupcake liners, filling about 2/3 of the way. Bake about 20 minutes, or until they are cooked all the way through.


While the cupcakes bake, begin to make the icing.


To Make Icing

Step 1:
Sift powdered sugar into bowl, mix in softened butter with beater until combined.


Step 2:
Add wet ingredients, mix well until icing is to your preference. If it is too thick, simply add an extra tablespoon of milk.



Step 3:
Add in food coloring if desired, I used 10 drops of red food coloring to achieve this color. Mix this in by hand so as to not over mix the icing. Set aside in fridge until cupcakes are cooled to decorate.


To Make Strawberries


Step 1:
Begin using a double boiler to melt the chocolate chips. You can also do this in the microwave by melting it in 30 second increments, stirring at each time until they are fully melted.



Step 2:
Rinse off the strawberries, dry off completely. Then dip each strawberry up to the green leaves in chocolate. Lay out on parchment paper to fully harden, you may also place in the fridge or freezer for quicker results. Be sure to add any decorative sprinkles while the chocolate is still wet.





Assembly

Step 1:
Once your cupcakes have fully cooled, begin to apply icing either with a piping bag or by hand.


Step 2:
If serving immediately, go ahead and lay one chocolate covered strawberry on top of each cupcake. If you are making these ahead of time then keep the strawberries in a separate container in the fridge so as not to create extra moisture on the cupcakes.


If you prefer, you can also serve these with decorative tops and serve the strawberries on the side.
