{Week 17}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every weekday evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. I will be including the SmartPoints value for each meal in case any Weight Watchers members are interested. Enjoy this week's menu!


Monday
Coconut Vegetable Curry with Brown Rice
SmartPoints Value: 6 points
This week, I was trying out new recipes from my Skinnytaste Fast and Slow cookbook that I received for Christmas. The first recipe I tried was this curry and it was very delicious and filling!


Tuesday
Fork & Knife Turkey Burgers with Onion Rings
SmartPoints Value: 17 points
The next recipe I altered a bit as I limit my red meat consumption so I used turkey burgers instead of beef for this. I found that my mushroom buns were too soggy so I feel I need to find a better way to crisp them up if I were to make this again. I also do not eat cheese so the SmartPoints value is for the version I ate, while the picture is what my husband ate.


Wednesday
BBQ Pulled Chicken with Tomato and Herb Pasta and Steamed Corn
SmartPoints Value: 11 points
My husband was stalking this recipe in the crock pot all day, and thankfully it met his expectations greatly. The chicken is very flavorful and I really enjoyed the homemade barbecue sauce.


Thursday
Hamburger Stroganoff
SmartPoints Value: 8 points
I again altered this recipe by using ground turkey instead of beef. Overall, I thought it was ok but I felt it needed more seasonings.


Friday
Baked Cod and Chips
SmartPoints Value: 10 points
The final recipe for the week I tried was this fish and chips meal. I really enjoyed the potatoes but wasn't a big fan of the fish. I feel I should probably have halved the fillets before breading and may use a different kind of fish next time.
