Menu Planning Series {Week 14}

9:00 AM

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. This week was a shorter week so I have three meals to share this time around. I will be including the SmartPoints value for each in case any Weight Watchers members are interested. Enjoy this week's menu!

Spaghetti with turkey meatballs and Garlic bread
SmartPoints value: 14 Points
Since Monday was Halloween, I wanted a simple meal to eat before the trick-or-treaters started arriving. This is one of my go to easy meals since my sauce cooks in the slow cooker all day long and then I just need 10 minutes to make bread and pasta.

Chick-Fil-A sandwich with Roasted vegetables
SmartPoints Value: 14 points
When craving not so healthy fast food, I like to try and recreate it at home for a bit less guilt and to save myself some SmartPoints. This is the copycat version of the classic Chick-Fil-A sandwich along with some roasted potatoes, carrots, and onions.

Baked salmon with Angel hair pasta & herbs and Steamed corn
SmartPoints value: 14 points
My husband loves seafood so I try to incorporate it into our meals as often as I can. This salmon was super delicious with the Teriyaki seasoning and a big hit for the entire family!

To celebrate my husband and I's anniversary, we took the family out to Red Lobster. I had my usual Maple Glazed Chicken with Wild Rice Pilaf.

Chicken Stir Fry
SmartPoints value: 6 points
This is one of my all time favorite dishes, and I do repeat it probably too often but it's so yummy. Click here to see the full recipe.

I hope you enjoyed getting a glimpse into my kitchen and menu planning for the week. If I have recipes on my blog for any of the meals posted then the text will be linked in their description. If you would like a recipe for any of the meals posted, please let me know! Click here to see my last edition of my menu planning series.

In the comments below, let me know your favorite seafood recipe.

As always any requests, questions, or comments are greatly appreciated. Talk to you soon!
