Menu Planning Series {Week 13}

9:00 AM

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. This week was a shorter week so I have three meals to share this time around. I will be including the SmartPoints value for each in case any Weight Watchers members are interested. Enjoy this week's menu!

BLT Wraps with Pea Crisps
SmartPoints Value: 8 Points
I am a big fan of wraps and was in need of a quick fix dinner option so this is what I came up with. This wrap contains smoked turkey deli meat, turkey bacon, and a power green salad mix with mustard. I served some lightly salted pea crisps on the side and this made for a filling and simple meal!

Pulled Barbecue Chicken Stuffed Sweet Potatoes with Dole Sunflower Crunch Salad
SmartPoints Value: 6 Points
My family are big barbecue fans and I wanted to lighten it up a bit with this pulled chicken version. The salad is a premixed one from Dole and is super delicious!

Tortilla Pie
Smart Points Value: 4 Points {per half serving}
I tried out this new recipe which is I thought would be a good twist on our typical taco dinner. I found it to be ok but a little too dry for my liking and the tortillas ended up not being as crispy as I had hoped. I don't think we'll have it again unless I can figure out how to fix those problems.

I hope you enjoyed getting a glimpse into my kitchen and menu planning for the week. If I have recipes on my blog for any of the meals posted then the text will be linked in their description.
