Vegan Mac and "Cheese" {Pinterest Test Kitchen}

One thing I did, that was not in the original instructions, was precook the squash and potato. I did this earlier in the day and let it fully cool before adding to the blender. The main reason for this was that I do not like putting extremely hot liquids in the blender as it has given me problems before. If you have experience with your blender handling hot liquids then follow the directions as given.

I tasted the sauce once it was done blending and found the texture to be quite like a cheese sauce and it definitely has a coloring of cheese. The taste was very unique and I don't have much to compare it to. It tasted very fresh and flavorful so I was excited to see how it paired with the pasta. Most importantly, I tested this out my picky eaters as their opinion is brutally honest.

The Final Product and Review

The recipe itself is very easy to follow and doesn't require too much effort so I appreciate that. I found that the sauce blended very nicely and ended up being very creamy. I mainly made this for my children to have as a dinner option and they loved it! I did not tell them that this was cheese free until after they tried it and they did say that while they didn't taste anything close to cheese, it was delicious. I found that you mainly taste the seasonings and a bit of coconut milk. It is a unique flavor that to me, isn't easy to describe.

The consistency of the sauce with the pasta is extremely similar to macaroni and cheese, it appears like any homemade macaroni I have had before. Overall, I feel like this is a great recipe to mix in as a side dish for our dinners every now and again. I love that it's a way to get a good source of vegetables in to my family's diets and in an extremely tasty way.
