Menu Planning Series {Week 12}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. This week was a shorter week but still had some yummy food. I am also including the SmartPoints value of each for any fellow Weight Watchers member. Enjoy this week's menu!

Chicken and Apple Sausage Stuffed Peppers

This was a different take on my typical Stuffed Peppers recipe, I typically use ground meat but instead I used chicken apple sausage and dried fruit. It was super delicious and definitely a great Autumn like twist on the recipe. Click here for my original recipe.

Grilled Chicken Ramen
SmartPoints Value: 8 points

I changed up my typical ramen pasta recipe, using grilled herb chicken instead of steak strips. This is a great basic recipe that can be made with any meat or vegetables of your choosing. Simply purchase a pack of ramen, do not use the seasoning pack and instead boil in broth then mix in with your choice of toppings. Very filling and delicious!

Shell Pasta with Turkey Sauce, Green Sunflower Salad, French bread

This was originally going to be a soup but I instead decided to turn it into a more pasta with meat dish. I paired it with a green salad with sunflower seeds and fresh bread.
