Menu Planning Series {Week 11}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. Enjoy this week's menu!

Hamburger, Roasted Vegetables, Pickle
To celebrate Labor Day, we had a barbecue and I wanted to keep it more light. We served these burgers along with one of my all time favorite side dishes. I also made a blackberry cobbler.

Orange Glazed Chicken Breasts, Butter Pasta, Corn
I had originally planned to make this with the typical meat option I use but unfortunately the store was sold out of turkey breasts so I substituted with chicken and it turned out amazing. Sometimes trying something new out of no other option works out!

Chili Lime Chicken, Mashed Potatoes, Green Beans
I do not like serving the same main course meat two days in a row, just my preference, but due to the switch needed for the day before we did have chicken back to back. Normally this recipe includes bell peppers but mine were left at the store, just wasn't my week apparently. It was still very tasty and paired perfectly with my homemade creamy potatoes.

Mexican Pizza

Southwestern Salad
This was a new recipe that I was trying out and unfortunately it was a big miss for the entire family. This is a homemade version of Taco Bell's Mexican Pizza and while it started off great, it ended up being very soggy and chewy. I am hoping to find a way to better crisp up each layer and maybe attempt it again. Mine did not include cheese as I have a sensitivity to dairy products. At least the salad was delicious!
