Menu Planning Series {Week 9}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. Enjoy this week's menu!


Monday

Cherry Maple Glazed Chicken with Pilaf, Green Beans, and Cheddar Bay Biscuits
One of my go comfort dishes that I feel I do repeat fairly often but still keeping it to once a month if I can. The best part is just how filling it is and it makes amazing leftovers! Click here for the full recipe for the chicken strips.


Tuesday
Mini Shepherd Pies with Power Green Salad with raspberry vinaigrette and homemade croutons
This was a new recipe that I tried from Weight Watchers, I did change out a few things such as some seasonings and I used ground turkey instead of beef. The salad is light and refreshing and becomes even better with my homemade whole wheat croutons. 


Wednesday
Garlic & Lemon Chicken with Mashed Sweet Potatoes and Corn
One of my classic recipes that is my husband's favorite, it's simple to make and very tasty. I paired it with one of my go to side dishes!


Thursday
Taco Pasta with Breadsticks
My son is a pasta addict and I often try and make sure to fit in at least one pasta dish every couple of weeks. This is super tasty and full of vegetables!


Friday
Chicken Enchiladas with Spanish Rice
I had been craving Mexican food all week and decided that these enchiladas would do the trick. I paired it with some homemade Spanish rice which could be added directly into the enchilada if you'd prefer.
