Menu Planning Series {Week 8}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. Enjoy this week's menu!

This week was a bit different due to my husband traveling for work. So I only have a half week to share as we just had leftovers for the last two days of the week.

Turkey Lasagna with Cheesy Cauliflower Breadsticks
This meal was inspired by the recipe I was testing and reviewing for this month's Pinterest Test Kitchen. I decided a good pairing for these breadsticks would be my turkey lasagna. Quite filling and great for leftovers! Click here to see my review of these Cauliflower Breadsticks.

Pickle-Brined Baked Chicken Tenders with Mashed Potatoes and Mixed Vegetables
As a Weight Watchers member, I often see posts about the website "Skinny Taste", so I decided to give a few of the recipes a try. The main entree of this meal is from the site and you can find the recipe by clicking here.

Fajita Turkey Burgers with Fiesta Lime Rice
This meal was supposed to have some lovely fresh baked hamburger buns with it but unfortunately they spoiled on me so instead I went the bun-less route, you just have to go with the flow sometimes! The side dish is another recipe from Skinny Taste, click here to check it out.

Although it was a shorter week of meals, I still hope you enjoyed getting a glimpse into my kitchen and menu planning for the week.
