Menu Planning Series {Week 7}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. Enjoy this week's menu!


Monday
Chicken Fried Rice
This was a week where I was trying to eat light for the most part. One of my go to filling options that is still healthy is this chicken fried rice. The best part about this dish is the slow cooked teriyaki chicken that I cook in my slower cooker for about 6 hours with a homemade teriyaki sauce. It is truly addicting and is perfect on its own but even better mixed with brown rice and some steamed vegetables.


Tuesday
Mini black bean burgers with lettuce, twice baked potatoes with chives, steamed edamame
This was a full vegan meal that is one even my kiddos greatly enjoy. My favorite part has to be the potatoes especially since I've just recently found vegan butter and it's changed my life! While I am not vegan, I try to eat very little meat and keep my diet more whole food focused. I slip in meatless meals into our weekly menu as much as possible.


Wednesday
Lemon chicken soup with french bread
Nothing works out better for a busy day then a meal that cooks itself. This is one of my favorite homemade soups to make and it does all the work in my slow cooker. I also had some fresh french bread that needed to be used up and this paired perfectly for a great comfort food dish!


Thursday
Taco Salad
It may be hard to see under all my kale and spinach but this is one of my favorite quick fix meals. This is our taco salads which is layered with crushed taco shells, vegan meat crumbles, refried beans, salsa, and then my power greens on top. It is absolutely delicious and very filling. My husband and kids add cheese on top of theirs as well.


Friday
French toast roll ups, scrambled eggs, turkey bacon
Who doesn't love breakfast for dinner? It's definitely a fave in our home and was highly requested. These french toast roll ups were featured in one of my first Pinterest Test Kitchens and you can find that post by clicking here. The filling for these was banana and nutella. Trust me that this meal will be a hit in your home!
