Menu Planning Series {Vegetarian Meals}

Welcome to my menu planning series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. Enjoy this week's menu which consists of all vegetarian meal options!


Week 5 Menu Planning


Monday
Vegetarian Baked Taquitos, Spanish Rice, Steamed Sweet Corn
To satisfy our family's love of spicy food, I made these taquitos, rice, and corn. This is an extremely filling meal and very delicious. Click here to get the recipe I used for the taquitos.


Tuesday
Garlic Pasta with Roasted Tomatoes and Breadsticks
My son is a big fan of pasta dishes so I wanted to make sure to give him a nice vegetarian option this week. This is a very flavorful pasta with a creamy texture. Click here to get the recipe I used.


Wednesday
Chickpea Curry with Brown Rice
I love curry and have always wanted to try a vegetarian style option so I thought this would be a great opportunity to give it a shot. This turned out extremely delicious and was packed full of flavor, it was even better the next day as leftovers for lunch! Click here to get the recipe I used.


Thursday
Homemade Veggie Pizza
This is one of our go to dinners for busy days. To make it a lighter and more vegetarian friendly option, I didn't add any cheese and topped this pizza with bell peppers, mushrooms, and black olives on one side. I also made one with spinach and sun-dried tomatoes.


Friday
Cheddar Biscuits, Mushroom Risotto, Corn on the Cob, Macaroni and Cheese
The main star of this meal was the risotto and it was my first time making this, it was creamy and super delicious but I would use less cheese next time as it was quite overpowering for my taste-buds. The macaroni was for the kids as they didn't care too much for the rice. Click here to get the recipe I followed to make the risotto.
