Menu Planning Series {Week 2}

Welcome to Week 2 of my Menu Planning Series! This series is all about me sharing my family's week of dinners. I make dinner for the family every week day evening, on weekends we eat leftovers and sometimes go out to eat. I try my best to switch up our meals fairly often and am always looking for new recipes to try. I am hoping this series inspires some of you and also keeps me from being too repetitive with our meals. I will be posting this series every two weeks, which was voted on by all of you. Enjoy!


Week 2 Menu Planning


Monday

Slow Cooker Turkey Vegetable Soup
You will notice this week was full of slow cooker meals and I started off the week with one of my favorites. This is a soup inspired by a recipe found on SkinnyPoints.com, click here to see the original. I switched it up by using ground turkey, vegetable broth, and whole wheat vegetable rotini pasta, I also added several of my favorites spices such as chili powder and cumin.


Tuesday

Cashew Chicken Wraps with Black Beans and Brown Rice
One of our family favorites are these lettuce wraps. They are simple to make and are amazingly delicious and filling! I found the original recipe for these on Pinterest, click here to check it out.


Wednesday

Turkey Chili and Honey Butter Cornbread
Another slow cooker meal this week was this made from scratch comfort food combination. This worked out perfectly as we had some milder Spring weather this week. This chili is very similar to my Sweet Potato Chili recipe, click here to check it out.


Thursday

Chicken Stir Fry
One of my more simple dishes but very filling and one that can be made your own by simply switching out the protein and vegetables used.


Friday

Spaghetti with turkey meatballs and Garlic Texas Toast
To finish out this week's meals was the final slow cooker recipe. I start by making my turkey meatballs, I sear them and then add to my slow cooker with my homemade spaghetti sauce. I let it simmer all day and then just boil some whole wheat noodles and mix it all together. If you want the full recipe then just let me know!
