In the original recipe, it says to place in the freezer for a few hours after baking and cooling. I went ahead and just put mine in the fridge overnight and it set perfectly fine, so if you don't need this to be done quickly then I recommend using that method if need be. I also cut mine into a little larger than bite size pieces and managed to get about 20 total pieces.




Overall, this is a great simple cheesecake recipe that definitely took a twist with adding in the melted white chocolate chips. I am not a fan of white chocolate so I was hesitant to how this would impact the flavor, but I honestly did not notice any white chocolate flavoring in the bites. I enjoyed the fact there is not a ton of sugar in these so it keeps a very New York style flavor to the cheesecake. My crust was much thicker than I had expected it to be so it made for some of the bites to be quite uneven. I would likely make less crust or use a bigger pan next time.





The cooking time was perfect and the overall texture and flavor of the cheesecake was light and delicious. I really enjoyed the crust as well and found it to be a simple recipe that can easily be turned into many other options. I am not a baker by any means so my decorating skills are sub-par but I think this design still turned out fairly cute. I highly recommend giving these a try as they do not take long to come together and will be a perfect addition to any holiday celebration. I am delighted to make more of these come Christmas time and experiment with more flavors in the cheesecake batter.
