Sweet Potato Chili


What You'll Need:



- 1lb ground beef or ground turkey
- 1 large sweet potato, peeled and chopped into bite sized pieces
- 1 large yellow onion, minced
- 4 to 6 roma tomatoes, chopped into bite sized pieces
- 4 cloves of fresh garlic, minced
- 1 can (15oz) tomato sauce
- 2 tbsp ground cumin
- 1 tbsp salt
½ tbsp dried oregano
- 2 tbsp baking cocoa powder
- 2 tbsp chili powder
¼ tsp red pepper flakes
- 1 to 2 cups of water, the less water you use the thicker the chili will be
- Crock pot or large soup pot


Instructions


Step 1:
Begin by caramelizing your onions and browning your meat in a skillet over medium-high heat. Heat until the onions are cooked through and beef is done. You may add the spices at this step or wait until later in the process.





Step 2:
While meat is cooking, begin to chop your vegetables. Chop your sweet potato and tomatoes and place inside crock pot.





Step 3:
Once meat is cooked, place in crockpot. Add in all of the remaining ingredients and mix well. Place your crockpot on low heat and set timer for 8 to 10 hours. I find 9 hours to be my ideal time but crockpots vary so check on yours starting around the 8 hour mark. The flavors will intensify the more it cooks but be sure to taste and add any extra seasonings to your preference toward the end of the cook time.






Step 4:
Once chili is done, let it sit for about 10 minutes before serving. My go to side dish with this is cornbread muffins and I highly recommend giving them a try by crumbling them on top of your chili bowl!





This is one of my families favorite cold weather dinners and it really is a great comfort food fix. I know the idea of cocoa powder and sweet potatoes may seem odd in chili, but trust me that this is a one of the kind chili that everyone will love.
