I ended up having some extra batter so I used the rest in a mini cupcake pan to make some "taste test" cupcakes since I plan on serving the normal sized cupcakes for our Thanksgiving celebration. The recipe states that it makes 12 cupcakes but my batter came out to be about 15 to 16 cupcakes.

My Review:

I had my daughter help prepare these cupcakes with me and found it to be an extremely simple recipe to follow and one that truly reminded me of making a typical pumpkin pie. The recipe came together rather quickly and I ended up baking mine for about 5 minutes longer than the suggested time in the recipe. Like with any recipe, make sure you are aware that all ovens differ and you should check throughout the baking process so you don't over or under-cook.

These cupcakes have a unique texture to them that is a bit more moist and have a stickiness to them that can be misleading to them being fully cooked. You do want them to have this texture though so be sure to poke and it will come out clean on the stick but it will remain sticky when it is done being baked.

My entire family loves these and to me, I love how not overly sweet they are. With the holidays, I feel like it's usually sugar overload and I like the idea of having lighter desserts to balance things out a bit more. These cupcakes are not heavy and contain the perfect flavor profile of a true pumpkin pie slice. They are extremely moist and are quite addicting! I highly recommend giving these a try and I think if you are in need for a last minute Thanksgiving dessert then this is a winner. Simple ingredients plus quick cook time, equals a tasty and stress free dessert option for your holidays!
