Spiced Lime Chicken with Butter Pasta

If you are looking for a simple and quick recipe then this is the perfect fit for you. I love this as a go to quick meal since it really takes little preparation and little time to come together. I highly recommend keeping the spice mix I use on the chicken, as a bulk item because you can use this spice on roasted vegetables and several other meat dishes. The recipe given for the spice mix will be far more than you need for this meal so store it in a ziploc bag and use it up within a few months.

What You'll Need:

- 2lbs of chicken breast tenders
- 2 limes
- Bowtie pasta (or any type you prefer)
- 2 tablespoons spice mix
- Fresh herbs (optional), I used parsley

Step 1:
Begin by making your spice mix, if you do not have it on hand like I do. For the spice mix you will need.
- 3 tablespoons garlic powder
- 3 tablespoons paprika
- 3 tablespoons salt
- 1 tablespoon chili powder
- 1 tablespoon pepper
- 1 tablespoon onion powder
- 1 tablespoon dried thyme

Step 2:
Season one side of the chicken strips with 1 tablespoon of the spice mix. Place into well oiled pan, seasoned side down. Then season other side with another 1 tablespoon of spice mix. Cook about 5 minutes per side on medium-high heat or until cooked through. Zest limes over chicken and juice both limes over chicken, turn heat to low and let steam in lime juice for up to 10 minutes.

Step 3:
While chicken is cooking, cook your pasta according to box directions. Once cooked to your preference then drain and add butter and any fresh herbs of your choosing. Mix well.

Step 4:
When serving this dish, you can either serve them separately or slice the chicken and mix with the pasta.
