Gooey Butter Shortbread Recipe


Today I wanted to share with all of you my review of this recipe which was provided to me by LAND O LAKES. This recipe is highlighted by LAND O LAKES brand new product which is the European Style Super Premium Butter.


What You'll Need:

Crust


1 cup all-purpose flour
⅓ cup powdered sugar


Topping


1 tablespoon water
2 tablespoons light corn syrup
1 teaspoon vanilla
6 tablespoons LAND O LAKES European Style Butter, softened
¾ cup sugar
¼ teaspoon salt
1 egg
1 cup and 2 tablespoons all-purpose flour
Powdered sugar, if desired


Step 1:
Begin by heating your oven to 350 degrees Fahrenheit. Line an 8-inch square baking pan with aluminum foil. Spray foil lightly with non-stick cooking spray. Set aside.



Step 2:
Combine all crust ingredients in bowl; beat at medium speed just until mixture resembles coarse crumbs. Press dough evenly into bottom of prepared pan. Bake 15 minutes. Remove from oven; cool 10 minutes.





Step 3:
Place 6 tablespoons butter, sugar, and salt into bowl; beat until well combined.



Step 4:
Add egg; beat until well mixed.





Step 5:
Add flour alternately with corn syrup, vanilla, and water, beating until well mixed after each addition.





Step 6:
Spread topping evenly over shortbread crust. Bake 25-30 minutes or until golden brown.



Step 7:
Cool completely. Remove from pan; sprinkle with powdered sugar, if desired.



This recipe was very simple to follow and I even had my daughter helping! I found this new butter to be rich and flavorful, it truly elevated such a simple shortbread recipe to a more exquisite taste. I found these to be not very sweet and needed the powdered sugar but they are very rich and I would recommend making smaller bars than what I did. A little goes a long way with this.


Overall, I really enjoyed this new butter and find it to be a unique product readily available in your local grocery store. I wouldn't find this to be practical for every recipe calling for butter but for special desserts and meals, I would definitely reach for this since I know it will bring my recipe to another level. I plan on making a pasta dish next with this to see how well it works in the more savory department. So, if you have any recommendations then please comment below!
