Boston Cream Pie Cupcakes

What You'll Need:





Step 1:
Simply get yellow cake mix and make 24 cupcakes according to the directions on the box.




Step 2:
While the cupcakes bake, make your filling. Keep chilled in the fridge while your cupcakes bake and cool.




Step 3:
Make the chocolate ganache.




Step 4:
Once cupcakes are cooled, cut in half and add a heaping spoonful of filling. Drizzle or dip the top of the cupcake into the ganache.





My opinion of this recipe is that despite the fact that there are several steps and parts to making this cupcake, it is very simple and tastes delicious. I tasted the filling before adding it to the cupcake and didn't really think it tasted quite like the cream in a Boston Cream Pie but when the cupcake was complete, it truly tasted like a fresh slice of the pie. I was very impressed with just how delcious this turned out and the entire family was in love with them as well! I found these to also be quite light, again surprising with all that it has going on. I would highly recommend giving these a try!
