Turkey Pot Pie



What You'll Need:


2 pie crusts
2 tablespoons butter
⅓ cup chopped onion
⅓ cup all-purpose flour
¾ teaspoon salt
¼ teaspoon pepper
1½ cup chicken broth
⅔ cup milk
3 cups shredded or cubed turkey
2 cups thawed mixed vegetables
Spray oil, to coat baking dish
Aluminum foil, optional




Step 1: Unfold one pie crust, lay on the bottom of baking dish. Preheat oven to 425 degrees Fahrenheit.





Step 2: In medium saucepan, melt butter.




Step 3: Add onion and cook for 2 minutes.




Step 4: Add flour, salt, and pepper. Stir, then gradually add broth and milk, cook until bubbled and thickened.






Step 5: Stir in turkey and vegetables. Remove from heat.




Step 6: Spoon filling into crust. Place second crust over filling, cut slits in top to vent.





Step 7: To prevent burnt edges, I take a strip of aluminum foil and wrap around the edges. This does not prevent the edges from getting browned so I would recommend this step but it is optional, just keep an eye on your crust as it bakes.




Step 8: Place turkey pot pie into oven and bake for 30 to 40 minutes, check fairly often to make sure top is not being burnt and to make sure your filling is not spilling over. If vented correctly then no spillage should happen. Once pie is done, let cool for up to 30 minutes for a thicker sauce to form.






I hope you enjoyed one of my family's favorite comfort foods. There may seem like a lot of steps but I promise once you make it the first time, it will be a breeze. This is a very filling dinner and has everything you need in one dish. I highly recommend you try this with chicken or tofu if you want to keep it vegetarian friendly.
