Tortilla Chicken Recipe





What You'll Need:
1 teaspoon canola oil
1 onion, chopped
1 bell pepper, seeded and chopped
2 garlic cloves, minced
3 cups chicken broth
14½ ounce can diced tomatoes with green chilies
10 ounce frozen corn, thawed
1½ cups chopped, cooked chicken breasts
¼ cup chopped fresh parsley or cilantro
Salt to taste, optional
tortilla chips, crushed


Directions:



Step 1:
Heat canola oil in a large nonstick saucepan over medium-high heat. Add onion, pepper, and garlic. Cook until browned, about 5 minutes.





Step 2:
Add broth, tomatoes, corn, and chili seasoning mix. Bring to a boil over high heat. Add chicken and fresh herbs. Reduce heat, simmer for about 2 minutes.







Step 3:
Serve with crushed tortilla chips on top.
