Stuffed Peppers Recipe




What You'll Need:
1½ pounds ground turkey or beef
1½ cups cooked brown rice
6 green bell peppers
1 tablespoon butter
1 tablespoon olive oil
½ cup chopped onion
½ cup chopped celery
14.5 oz diced tomatoes
8 oz tomato sauce
1 clove of garlic, crushed
1 teaspoon oregano
½ teaspoon dried basil
2 teaspoons salt, divided
½ teaspoon pepper, divided
1 egg, lightly beaten
1½ teaspoons Worcestershire sauce
Sliced cheese, optional


Directions:


Step 1: 
Begin by cutting off the tops of the peppers, remove seeds and membranes. Chop edible part of tops and set aside. Rinse peppers under cold water. Place in large pot, cover with salted water. Bring to a boil, reduce heat, cover and simmer 5 minutes. Drain, set aside.








Step 2: 
Heat oil and butter in a medium pan, saute pepper pieces, onion, and celery for about 5 minutes. Add diced tomatoes, tomato sauce, garlic, herbs, salt, and pepper. Simmer 10 minutes.









Step 3:
Preheat your oven to 350 degrees. In a large mixing bowl, combine egg with remaining salt and pepper and Worcestershire sauce. Stir, add meat, rice, and 1 cup tomato sauce mixture. Then mix well. Stuff peppers, place in a 3-quart casserole dish. Pour remaining tomato sauce mixture over peppers. You may add cheese if you wish. Bake for 55 to 65 minutes.

















I served these tonight with roasted corn on the cob. They are plenty filling on their own and pair well with a salad.
