Chicken Stir Fry


What you'll need:

1 to 3 lbs of chicken breast tenderloins, cut into chunks
1 bag of mini bell peppers or 3 whole bell peppers, sliced into strips
1 onion, sliced into strips
1 cup mushrooms, chopped
3 tbsp soy sauce
1 tbsp steak seasoning
2 tbsp light brown sugar
1 tbsp peanut oil


Directions:

Step 1:
Begin by slicing all of your vegetables.



Step 2: 
Add oil to stir fry pan, wait until warmed before adding vegetables. Once you add vegetables, cook until tender and slightly browned, about 5 minutes. The time varies on the amount of heat you use so keep an eye on it as the vegetables can burn quite easily.



Step 3:
 Once the vegetables are browned, you may either set them aside on a plate while you cook the chicken or add the chicken on top. Once chicken is added, be sure to season with the steak seasoning and soy sauce. Cook for about 4 minutes until cooked half way through.



Step 4:
 Next, stir the chicken well and add the brown sugar on top. Stir well to combine, and let simmer for about 5 minutes until a sauce begins to form. Once the sauce forms, turn heat to low and cover for another 5 to 10 minutes until chicken is cooked all the way through.



Step 5: 
While chicken is cooking, begin to make your rice. I alternate between minute rice and long grain. When I make my stir fry rice, I always use half water/half chicken stock as my base. It adds extra flavor but is an optional step. Otherwise follow the directions of the rice of your choice.



Step 6: 
Once rice and chicken are done cooking, begin to plate. First plate your rice, the amount is up to you and depending on how many you are serving. I tend to get about 6 servings out of my recipe. After the rice is plated, add the chicken and vegetables on top. You may top with extra sauce if you'd like. Enjoy!






This isn't a traditional stir fry and I switch up the vegetables used all the time, so be creative and make it your own. It's an easy dish and one of my family's favorites!
